Hidden Chicken
1 cup rice 1 can mushroom soup 1 pkg onion soup mix 1 1/2 cup water 1 cut-up chicken or pieces In a pan or dish, you can cover, spray with Pam or grease dish. Put all about ingredients in a pan, except chicken, mix well. Lay chicken on top. Bake for 1 1/2 hours at 350 degrees, do not uncover during cooking.
Ground Beef Hot Dish
1/2 Cup Brown Sugar 2 tsp Mustard 1lb Ground Beef 1/2 cup ketchup 1 Onion 1tsp Salt 1 can pork and beans 1 can kidney beans 1 can butter beans 1 tsp vinegar Brown hamburger, add chopped onion. In separate bowl mix sugar and mustard, ketchup, salt & vinegar, drain beans and add to hamburger & onion. Add the rest & simmer. The longer you simmer the better the flavor. You can put this on rice or potatoes or use it as is.
Dad's Pancakes
4C flour 4tsps baking powder {1 tsp baking soda, 1/4C warm water} 1/4C sugar 1/4C oil 3 eggs Pinch of salt 1C applesauce Mix together add enough milk to make a thick mixture. Add soda and warm water to batter. If to thick add milk to the desired consistency
Chimney Mtn
Getting to Chimney mountain: Coming from Indian Lake, head south on Route 30 and turn left on Big Brook Rd after about 0.5 miles. Follow Big Brook Rd for 8 miles to end. The trailhead is on private property. Keep your dogs on leash and pay the $2 parking fee. The trail is well marked and easy to follow along. The trail has a gradual rise of about 900 feet to an elevation of 2,720 feet. Towards the top, there are a few very short steeper sections. It's approximately 2.5miles round trip depending on how much exploring you do up top. Navigating around is pretty straightforward, going in and out of caves. There was a set of caves closed due to protecting the bats. There was a lot to enjoy, even the cool breeze that sneaks its way through...
